MANDARIN GLAZED BANANA PUFFS

2 bananas (ripe)
¼ cup pineapple (crushed)
¾ cup flour
1 ½ tbsps. sugar
½ tsp. lemon juice
1 tsp. cinnamon
2 cups vegetable oil

Topping
1 small  can mandarin oranges
1 ½ tbsps. brown sugar
2 tbsps. cream
1 tbsp. butter

– to a medium bowl add bananas, pineapple and mash well
– add flour, lemon juice, ½ tbsp. sugar and fold evenly
– in a small bowl add 1 tbsp sugar, cinnamon and blend evenly
– in a medium large sauce pan heat oil (to frying)
– spoon mixture into balls
– using a slotted spoon, gently place dough in oil
– cook thoroughly, turning often
– remove from oil with a slotted spoon and drain
– roll in cinnamon mixture

Topping:
– to a small sauce pan melt butter, add mandarin oranges and sauté for 2 minutes
– add brown sugar, cream and continue to heat until starts to thicken, remove from heat
– spoon over puffballs
