GARLIC HERBED BAKED POTATOES

4 potatoes (washed, skin on)
1 tbsp. onion (pureed)
2 cloves garlic (minced)
2 tbsps. white wine
1 tbsp. vinegar
2 tsps. Dijon mustard
¼ cup olive oil
2 tsps. butter
1 tbsp. vegetable oil
1 tbsp. fresh chives (chopped )
1 tsp. fresh oregano (chopped)
salt & pepper to taste
– to a small sauce pan add wine and flash for 1 minute then remove from heat
– add onion, garlic, vinegar, mustard, olive oil, chives, oregano, salt, pepper and mix well then set aside.
– rub potatoes with vegetable oil to coat well, place on BBQ grill over medium low heat
– bake until ¾ done, slice middle of top about half through and place butter inside
– continue to bake until tender
– drizzle herbed sauce over top and serve
