RASPBERRY DREAM

4 cups raspberries
2 tbsps. orange juice
2 tbsps. orange rind (shredded)
2 tbsps. chocolate (shaved)
1/3 cup orange liqueur
1 ½ tbsps. brandy
3 tbsps. icing sugar
2 cups whipping cream

– in a medium sauce pan add raspberries, orange juice, sugar, orange liqueur and
heat gently over medium heat until sugar dissolves then remove from heat
– add 1 tbsp orange rind and fold together and chill
– in a medium bowl add whipping cream, (keep cold), brandy, 1 tbsp orange rind
and whip until firm with peaks
– portion berry mix into serving dishes
– spoon whip cream mix over berries
– garnish by sprinkling shaved chocolate over top
