SEASONED CILANTRO FILLETS

4 pickerel fillets
1 small onion (minced)
1½ cloves garlic (minced)
2½ tbsps. olive oil
3 tbsps. fresh cilantro (chopped)
1 tsp. chili powder
1 ½ tsps. cumin (ground)
1 tsp. Spanish paprika (ground)
2½ tbsps. lime juice
salt and cracked black pepper to taste
– in a small bowl add olive oil, chili powder, paprika, cumin, salt, pepper and mix well
– add onion, garlic, 2 tbsps. cilantro and blend well
– rub fish fillets with marinade mix and chill covered for 1-2 hours
– wrap BBQ grill with foil
– lay coated fillets on foil over medium heat
– turn once during grilling while brushing with remaining marinade mix.
– remove from heat once fully cooked
– dust with remaining cilantro
