Tomato Penne Summer Salad

INGREDIENTS
3 cups cooked penne pasta (blanched firm and tender, rinsed well)
12 cherry tomatoes (sliced in half)
1 cup spinach (washed and chopped)
2 stalks celery (sliced)
½ red onion (chopped)
¼ cup olive oil
2 ½ tbsps red wine vinegar
1 tbsp fresh basil (chopped)
1 tsp fresh oregano (chopped)
1 tsp brown sugar
½ cup feta cheese (crumbled)
salt and cracked black pepper to taste
fresh sprig of basil for garnish
DIRECTIONS
– in a large bowl add blanched pasta, spinach, celery, onion and toss to mix
– in a small bowl add red wine vinegar, chopped basil, oregano, brown sugar, salt, pepper and mix well
– drizzle vinaigrette over pasta salad and toss to coat
– add cherry tomatoes, crumbled feta cheese and toss gently to coat
– spoon into serving dish
– garnish with fresh basil sprig
