ZESTY BBQ PORK

4 pork tenderloins
1 small can crushed pineapple (drain and save juice)
¼ cup orange juice
1 tbsp. apple juice concentrate
1 tbsp. worchestershire sauce
1 tsp. cornstarch
1 tsp. lemon grass
1 tsp. orange rind
1 clove garlic (crushed)
1 onion (minced)
1 tbsp. butter
1 tbsp. vegetable oil
salt & cracked pepper to taste
– adjust BBQ to medium and pre-heat
– in a sauté pan melt butter, add garlic, onion, pineapple and sauté for 2-3 minutes
– to a medium sauce pan add pineapple juice, apple juice concentrate, orange juice, worchestershire sauce, cornstarch, salt, pepper and mix well
– bring to a soft boil, remove from heat fold in sauté blend, lemon grass, orange rind and chill
– rub tenderloin with oil blend coating well
– place tenderloin on grill and cook, turning once until ¾ cooked
– brush marinade evenly on tenderloin and finish to cook
– use remaining marinade for garnish
