CHICKEN VERMICELLI

4 boneless chicken breasts (cut into cubes)
2 cups vermicelli (cooked firm)
2 green onions (chopped)
2 stalks celery (sliced)
1 ½ cups mushrooms (sliced)
1 onion (chopped)
½ cup white wine
1 cup chicken stock
1/3 cup soya sauce
1 ½ tbsps. vegetable oil
1 tsp. fresh cilantro (chopped)
½ clove garlic (minced)
salt & pepper to taste
– in skillet add 1 ½ tbsp. vegetable oil, garlic, onion, chicken and sauté until ¾ cooked
– add wine, mushrooms, celery and continue cooking for 2-3 minutes
– add chicken stock, soya sauce, salt, pepper and continue cooking until chicken is fully cooked
– add pasta, toss together until thoroughly heated, remove from heat
– in a small bowl add green onion, cilantro and fold together
– toss evenly over sauté mix
